Baby (Immature) Ridged Luffa Gourds can be eaten raw, or cooked like summer squash. They are a variety of Ruffa Gourds with similar taste and use. Anything under 4 inches (10 cm) doesn't need to be peeled. From 4 to 6 inches (10 to 15 cm), you may wish to peel it, as the skin can be bitter at that point, It is a popular Cambodian vegetable, often used in soups. Use as a substitute for summer squash or okra. Fruits are attractively sliced and do not have the bitterness of smooth luffas. it can be cooked in a pan with spices or with eggs.
